“Cognà” is a typical Piedmontese product prepared with cooked grape must with no added sugar; pears, apples, figs and dried fruit are added to the must, the dark color is due to the use of the must. the ancient recipe is handed down from farm to farm with various changes in the ingredients, as each prepared the recipe based on the fruits available at the time of preparation. Cognà was called “the sauce of the poor” because it was prepared by the farmers with the use of a mortar, in order to guarantee a sweet sauce, which provided them with the energy necessary to face the hard work in the fields of the medieval period.
