Onion is farmed since ancient times thanks to the easiness of its transport and storage; furthermore, it was a useful food, because could be dried and prevented thirst. Roman gladiators used it to firm muscles, and during Middle Ages onions’ importance as a food rose, and they were even used as payment for loan and presents. Doctors prescribed them to soothe headache, to cure snakes’ bites and hair loss. We prepare this sauce with red onions and natural ingredients.
