This sauce is prepared with the fine porcini mushrooms. The porcini mushroom, with an intense aroma and a delicate taste, is found mainly in the oak and chestnut woods, both in the plains and in the high mountains. The ancient Romans called these mushrooms Suillus for their squat and massive appearance, and the term porcino is the exact translation.
