Kamut tart with elderberry preserve

The tart is a classic dessert but it adapts to a thousand reinterpretations! As an alternative to traditional flavors such as cherry or apricot, we offer a delicious version of this dessert prepared with kamut flour and Elderberry Extra Preserve Cascina San Cassiano.

Ingredients
  • 250 g of kamut flour
  • 100 g of brown sugar
  • 100 g of butter
  • 1 yolk
Preparation

Pour the flour, diced butter, sugar and salt into a mixer, whisk, then add the yolk. Once a sandy consistency is obtained, transfer the dough to the work surface and form a dough to be covered with plastic wrap and put in the fridge for about an hour. After the necessary time, take the dough and roll it out with a rolling pin. Then spread the shortcrust pastry on the well buttered and floured bottom of a pie pan, leaving some dough for the edges. Spread the elderberry jam all over the base of the tart. Close the edges and bake in a preheated oven at 180 ° C for 40 minutes.
